🥞 Easy Fluffy Pancake Recipe

Ingredients (makes ~8 pancakes)

• 1 cup (125g) all-purpose flour

• 2 tbsp sugar

• 2 tsp baking powder

• 1/4 tsp salt

• 1 cup (240ml) milk

• 1 large egg

• 2 tbsp melted butter (plus more for the pan)

• 1 tsp vanilla extract (optional)

Instructions

1. Mix dry ingredients:
   In a bowl, whisk together flour, sugar, baking powder, and salt.

2. Mix wet ingredients:
   In another bowl, whisk milk, egg, melted butter, and vanilla.

3. Combine:
   Pour wet ingredients into dry ingredients. Stir gently until just combined.
   (Batter should be slightly lumpy — don’t overmix!)

4. Cook:

   • Heat a lightly buttered pan over medium heat.

   • Pour about 1/4 cup batter for each pancake.

   • Cook until bubbles form on the surface and edges look set (1–2 minutes).

   • Flip and cook another 1–2 minutes until golden.

5. Serve:
   Enjoy with maple syrup, fruit, chocolate chips, or your favorite toppings.
